An extension, start to finish
Book the site visit in the diary, then build the quote back at the van. Itemise it, set the deposit, send it. It's chased at three days and seven if it goes quiet.
When they accept, the job moves onto the board as booked work. Invoice it and the first bill is just the deposit.
Each day on site is a visit on the same job. Photos, notes, materials and hours go against it, so the job holds its own progress record.
Raise a stage invoice by hand when a stage is done. When the last visit is signed off, the balance is drafted for what's still owed.

Yes. A deposit on the quote is billed first. You can raise a stage invoice by hand as the work goes, and the balance is drafted when the job's finished.
Yes, if materials and hours are logged against it. The office view works out the profit and margin on each job, using your hourly rate for the labour.
