A rewire, start to finish
Itemise the cable, the board and the days. Ask for a deposit on the quote. When you invoice it, only the deposit goes out.
First fix and second fix go in the diary as two visits on the same job. Whoever is going sees the address, the scope and the notes from last time.
Photos of the runs before the plaster goes on, materials and hours logged, and the customer's signature on the phone at the end of the visit.
Sign off the last visit and the final invoice is drafted for whatever's still owed. Reminders go on the due date and weekly after that.

No. Keep using what you use for those. This runs the enquiries, quotes, diary and invoices around them, and you can attach photos of the work to the job.
Yes. Set a deposit on the quote. The first invoice is the deposit, and the balance is billed when the job finishes or when you raise a stage yourself.
Yes. I set access around what each person does. Someone fitting doesn't need to see what the job was quoted at, and won't.
If you log materials and hours, yes. The office view shows the profit on each job, and flags any materials logged without a cost so the figure isn't flattering you.
